Here both cameras look similar in terms of resolved details but Nokia 7.1 camera applies more saturation to the images making them appear more vibrant. While this may be liked by many, others may like the Nokia 6.1 Plus images for their less-saturated treatment of images.

Comparison Conclusion & Final camera review:
Nokia 7.1 rear camera performs appreciably well in all lighting conditions. The improvement over Nokia 6.1 Plus is significant in low-lighting conditions while capturing both images as well videos.
In terms of daylight captures Nokia 6.1 Plus camera appears to be doing as good as Nokia 7.1 camera in most of the cases. Though in video capture Nokia 7.1 appears to be slightly better than Nokia 6.1 Plus camera in even daylight.
But when it comes to color reproduction Nokia 7.1 takes a slightly different approach and in some cases adds vibrancy to subjects. Though when capturing natural subjects like flowers, leaves the colors come out truer. It seems that HMD imaging team is getting good at tweaking algorithms.
Selfie camera wise too Nokia 7.1 appears to be the winner here with capturing much more amount of details than Nokia 6.1 Plus selfie camera.
